Dessert for Lunch?

Yes, that’s right! I feel like I had dessert for lunch today. In keeping with my “weekend healthy food for writers theme“, I thought I’d share a photo and description of my lunch.
Although I still haven’t tried the banana hot dog and fries I raved about in yesterday’s post, I did have the ingredients on hand to try Kath’s pumpkin pie yogurt. It really is amazing!
I strayed from her recipe a smidgen in that I didn’t add the packet of Splenda. (I don’t use that sweetener.) The organic vanilla yogurt I used was already sweetened with organic sugar, so after a quick taste test, I felt it was sweet enough for me. Notice the two cookies. They’re organic gingersnaps–and, for this girl, a rare indulgence. I don’t splurge on sweets often anymore but I did today.
I also thought sprinkling a little gluten-free trail mix on top would be a nice compliment. And I was right! The pumpkin seeds and dried apples in it made it almost taste like Thanksgiving. Strange for a lunch, I know. It did seem like dessert, but it was very filling. I actually only ate half of it. I put the other half in the fridge for later. Imagine that!

Hi Michelle,
A black bean, jicama, and cilantro salad for me with black raspberry/balsamic vinegar dressing…..I think yours was better. I’ve been on a pumpkin kick this last two weeks so will have to try this for lunch tomorrow.
Yes, I still have a quilt with all my childhood memories. The nightie I wore when the chimney caught on fire and burned my eyebrows/eyelashes off, my dad’s shirt that the cat had her kittens on, my mom’s apron I made her in fifth grade. Everyone should have a memory quilt. We were too poor to know that our memories would be so precious!

Hmmm…. you’re lunch sounds VERY GOOD too!
Yes, I love pumpkin. I originally intended to link to a site with health benefits of pumpkin. I might update and do that. I forgot!
That quilt sounds awesome. Everyone should have a memory quilt, I agree. It must create special feelings to know you have something like that in your possession. I’m serious, though. You should submit that story to Chicken Soup. You have a magical way with words–not to mention AWESOME stories! You should write about surviving being struck by lightening (more than once!) too. You’re a neat gal, you are!
Let me know what you think about the pumpkin pie yogurt.

Hi Michele,
Your lunch looks delicious in the picture! I love yogurt anyway. Salads are always good, and my choice often. My desert is usually fruit, although I indulge in a cheesecake or something, usually sugar free. But whatever I’m having, I keep my carbs in the low range.
I enjoyed Dessert for Lunch. Maybe I’ll try something similar for my lunch today.

It was delicious! Yes, I love yogurt too–especially organic greek yogurt. It’s divine (thick, creamy, and wonderful!) and it’s low calorie, low fat (they have fat-free versions too) and low on the carbs. It’s great. It’s hard to find though. :’(
I make fruit smoothies sometimes and raw veggies make up most of what I eat. I’m pretty pleased with my food choices. I try to choose the healthiest options.
