Birthday Dinner: Feeding a Writer’s Soul

So far, I have kept my personal life off this blog but I decided to share my birthday with my readers…



What’s your favorite birthday meal? Mine is Mexican. Anything Mexican/vegetarian. I enjoyed eating it at my favorite Mexican restaurant for my birthday! I rarely ever eat out. I remember when I reached the awesome milestone of losing 100 pounds, my mother took me to celebrate at this same Mexican restaurant. It was a very special event!

Spicy salsa with crispy tortilla chips are the best… Yum-OOOO! ! See ‘emĀ  there? I always try to stay away from these the rest of the year, but they’re awesome and they’re complimentary while you wait for your meal!

(By the way, I didn’t eat all this food myself! A few others helped.)

What did I end up ordering? First of all, I always drink unsweetened iced tea with lemon. I use my own sweetener (Stevia Balance with Inulin and Chromium). When I was near 300 pounds, I was on a LOT of diabetic medication. Now my blood sugar is fine without medication. I keep it in check by eating and drinking healthfully and the Stevia helps balance my blood sugar as well. I love it’s taste, too!

The Garden Delight Quesedilla with onions,peppers, lettuce, tomatoe, sour cream, etc.

And a plate of Bean and Cheese Burrito, Enchilada and Tostada.

AND a side order of refried beans and Spanish rice.

I think the best part of this birthday was being around people I really care about. Mexican food and neat gifts and pretty cards didn’t hurt either, though! I love pink so I received pink office supplies (notebooks, a desk set, CD case, etc.). I also received a beautiful birthday card from a very special friend in Canada. (Thank you!)

And, I know you’re wondering about birthday cake. Well, there wasn’t one! I have to maintain my 100+ pound weight loss, you know. My favorite is chocolate, so I only splurged on a small (very moist and delicious!) chocolate brownie. It was gone before I thought to take a photo of it! ;-)

      Happy belated birthday! It sounds like you had a great one.

      I love Mexican food too, and your pictures made me really hungry for Mexican. However, since I’m currently on a journey to weight loss to lose over 100lbs., I’ll have to pass on the Mexican for now. ;)

      Thanks, Misti! Yes, I had a very good birthday. ::-)

      Mexican food is fabulous, but like I said I don’t eat it every day. Well, there are ways to make healthy versions and I do eat a lot of spicy foods – just without the cheese, etc.

      There’s nothing quite like a journey to lose 100 pounds. I think it’s different for us all but also similar in some ways. I’m here to tell you that it can be done. It takes time, dedication, perseverance, and strength but it can be done. I wish you the best in your weight loss journey, Misti. I know you can do it!

      Oh, Happy Birthday! I’m sorry I missed it. But I’m so glad to hear you had a good one.

      And I agree. If I can go to my favorite Mexican restaurant for my birthday this year, I’ll be a happy girl. I get their shrimp nachos, which are served with a white queso and grilled veggies. And they do have the best chips and salsa.

      Happy belated birthday, Michele!

      I, too, celebrated my birthday this past weekend! What a surprise that our birthdays are so close together! Glad to hear you had such a wonderful time! I did, as well. Though we ate in, we ordered pizza — one of my favorites! (Like you, I love Mexican food — but this time, Italian food prevailed!)

      Some of my gifts were flowers, money, and several beautiful sets of jewelry handmade by my daughter, who makes jewelry for a living. (How fortunate is it to have a daughter in that line of work?!)

      This weekend was a full one for me, since we also attended a wedding — and had a lovely time there, as well!

      Happy birthday, Michele! Your birthday dinner looks marvelous – I’ll be heading to my cupboard for nacho chips and salsa!

      I love birthdays – it’s my special day, after all! The perfect birthday for me is having the day to do whatever I want, spending time with my family and friends, and enjoying something really great to eat. Italian food is always my first choice :)

      I don’t necessarily need food on my birthday – but I love being on vacation! Since I turned 21, most of my birthdays have taken place elsewhere. This year, I was in Garmisch-Partenkirchen in Germany. I ate traditional Bavarian food for my birthday dinner and stayed out on the town entirely too late. :)

      I can never decide if I want my last meal on earth to be cornbread, large limas and onion, or a mexican dish!

      I, too, love Mexican. One of my gf’s from Mexico use to cook homemade Tamales for me – they were sooo good – the real thing.
